- Sardine “loose” rice:
Start by chopping 1 onion and 2 cloves of garlic, add 0.5dl of olive oil and bring to a deep fry. When this preparation starts to turn golden, add 4 tomatoes without skin or seeds, stirring very well. When the tomatoes are gone, add 500 g of large sardines or 800 g of small sardines (complete, if you like) and remove them after 5 minutes. Add 1 liter of water and, when it starts to boil, add 150 g of rice and sardines, letting it cook for 8 minutes. If you like, you can also add 1 bay leaf and 1 pinch of oregano.
- Spinach cookies (vegan recipe):
Sauté 1 chopped onion in 2 tablespoons olive oil. When the onion begins to turn transparent, add 60 g of spinach leaves, season with a pinch of salt and black pepper and stir well until the leaves wither. Remove the pan from the heat and let it cool slightly. In another container, put 400 g of cooked white beans and 1 tablespoon of chia, add the spinach mixture and knead everything very well. With your hands, form small balls (about 15) and place them in a tray lined with parchment paper. Preheat oven to 200 degrees for 10 minutes.
- Orange Carpaccio:
Peel 2 oranges and slice them, carefully removing the seeds and placing them on a plate. Sprinkle with half pomegranate berries and 3 well minced mint leaves. Separately, thoroughly mix the half-orange juice with half a tablespoon of honey. Drizzle the oranges and serve immediately.
- Poached eggs:
Place 1 shallow dish in the bottom of a bowl and fill with salt water to taste. Bring to the boil, and when it is hot (about 80º, do not boil!), divide 1 egg into a spoon with holes (of spaghetti, for example) and place it carefully in the bottom of the container, on the plate. Let cook 4 minutes and remove immediately. Serve over buttered toast, seasoned with 1 pinch of black pepper.
- Bean stew with turkey:
Cut 500 gr of turkey steaks into thin strips and season with salt and pepper. Pour 0,5 dl of olive oil in a pan and fry the turkey until it turns blond. Remove the container from the heat, place the meat aside and set aside. Chop finely 1 onion and 2 cloves garlic, peel and cut 2 carrots to the slices. In the same pot where the meat was fried, put 0,5 dl of olive oil in the garlic and chopped onion. Add the carrot, half cabbage heart cut to small pieces, stir and cook 2 more minutes on low heat. In this moment, you should then add 2 crushed tomatoes, add 2 glasses of water, season with salt to taste and stir well. Bring to a boil and simmer for another 7 minutes. It is time to add the turkey, let it boil, stir well and let it cook another 10 minutes. If necessary, add more hot water. In this final stage, add 2 cans of cooked beans (white or red), wrap well, keep the medium heat, allowing boiling, and let cook for another 10 minutes. Check the seasoning; add 2 mint leaves to taste and, when you feel good, turn off the heat.
